1.0 Introduction

Locust Bean Gum (often shortened to LBG) is also known as Carob Gum. Locust bean gum is extracted from the endosperm of the seeds of the carob tree Ceretonia siliqua, which grows in Mediterranean countries.

Locust Bean Gum is an excellent thickening agent and is relatively stable in acid and salt conditions. However it has only moderate stability in high temperature systems (such as canning) and freezing. It will also react synergistically with carrageenan and xanthan to assist in the formation of gels.

Typical dose rates in products such as fruit sauces are 0.1 – 0.8%.

Locust Bean Gum is manufactured in Italy and complies with FCC requirements. It has a minimum gum content of 70% and a viscosity of 2400 cps ± 200 cps (Standard Test)

For the purpose of this statement allergens are defined by the FSANZ Food Standards, in particular Standard 1.2.3 Mandatory warning and advisory statements and declarations, table to clause 4.

It defines allergens as “Cereals containing gluten and their products, namely, wheat, rye, barley, oats and spelt and their hybridised strains other than where these substances are present in beer and spirits standardised, Crustacea (shellfish), Egg products, Fish products., Dairy products, Peanuts, Soybeans, Tree nuts, Sesame seeds and any added Sulphites in concentrations of 10 mg/kg or more.”

Locust Bean Gum does not contain any known allergens as listed in Standard 1.2.3


6.0 Halal and Kosher Status

This product is currently not Halal or Kosher certified. However the product does not contain any animal products and no ethanol is used during its manufacturing.

For the purpose of this statement GM status is defined by the FSANZ Food Standards, in particular Standard 1.5.2 “Food produced using Gene Technology”

Locust Bean Gum is classified as Non GM and is not derived from any GM source.
