1.0 Introduction

Sodium Citrate is derived from citric acid. It is used to adjust the pH of food product, usually from an acidic pH to neutral pH, particularly in beverage, fruit and savoury applications. This can be very important when used in conjunction with stabilisers such as pectins, where the use of a buffering agent will move the pH away from the region where undesirable gelation may occur.

Sometimes called ‘trisodium citrate’, it is a freeflowing white crystalline powder, easily soluble in water and insoluble in oils or alcohol.

For the purpose of this statement allergens are defined by the FSANZ Food Standards, in particular Standard 1.2.3 Mandatory warning and advisory statements and declarations, table to clause 4.

It defines allergens as Cereals containing gluten and their products, namely, wheat, rye, barley, oats and spelt and their hybridised strains other than where these substances are present in beer and spirits standardised, Crustacea (shellfish), Egg products, Fish products., Dairy products, Peanuts, Soybeans, Tree nuts, Sesame seeds and any added Sulphites in concentrations of 10 mg/kg or more.

Sodium Citrate does not contain any known allergens as listed in Standard 1.2.3
