1.0 Introduction

Ascorbic acid is a valuable antioxidant in water-based systems and will preferentially degrade to protect the food system, especially where there is the risk of enzymatic browning. Ascorbic acid is readily soluble in water, but will degrade quickly to dehydroascorbic acid (DHA), when mixed with oxygen.

Please note that in some systems it can degrade to furfural and form brown pigments, so shelf life testing is imperative.

For the purpose of this statement, allergens are defined by the FSANZ Food Standards, in particular Standard 1.2.3 Mandatory warning and advisory statements and declarations, table to clause 4.

It defines allergens as Cereals containing gluten and their products, namely, wheat, rye, barley, oats and spelt and their hybridised strains other than where these substances are present in beer and spirits standardised, Crustacea (shellfish), Egg products, Fish products., Dairy products, Peanuts, Soybeans, Tree nuts, Sesame seeds and any added Sulphites in concentrations of 10 mg/kg or more.

Ascorbic Acid does not contain any known allergens as listed in Standard 1.2.3
