1.0 Introduction

Mono Di Glycerides is a commonly used emulsifier, derived from vegetable fat.It contains is a viscous liquid that disperses in oil (and will mix well when heated) but does not disperse easily when added to water.

Mono Di Glycerides is commonly used in chocolate and confectionery products, sauces, margarines and bakery applications, especially in tin release products.

Typical dose rates vary according to the amount of oil and the specific application but can range from 0.1 to 0.5%


2.0 Product Specification

Mono Di Glycerides is manufactured in Denmark and complies with FCC requirements. It has the appearance of an off-white powder and contains a minimum monoglyceride content of 60% and approximately 2.5% sodium stearate to assist with dispersion in water systems. The approximate melting point is 65°C.

For the purpose of this statement allergens are defined by the FSANZ Food Standards, in particular Standard 1.2.3 Mandatory warning and advisory statements and declarations, table to clause 4.

It defines allergens as Cereals containing gluten and their products, namely, wheat, rye, barley, oats and spelt and their hybridised strains other than where these substances are present in beer and spirits standardised, Crustacea (shellfish), Egg products, Fish products., Dairy products, Peanuts, Soybeans, Tree nuts, Sesame seeds and any added Sulphites in concentrations of 10 mg/kg or more.

Mono Di Glycerides is derived from vegetable fat and does not need to be declared as an allergen.
