Potassium Sorbate and Sorbic Acid are effective against yeast and mould, but have little activity against bacteria. Sorbic Acid is often used in bakery applications. However Sorbic Acid is very difficult to dissolve in water while Potassium Sorbate is readily soluble, and is therefore more commonly used. Potassium Sorbate needs to be used in slightly acid conditions (ideally below pH 5.5) to allow it to dissociate into Sorbic Acid and have the desired effect.

For the purpose of this statement allergens are defined by the FSANZ Food Standards, in particular Standard 1.2.3 Mandatory warning and advisory statements and declarations, table to clause 4.

It defines allergens as Cereals containing gluten and their products, namely, wheat, rye, barley, oats and spelt and their hybridised strains other than where these substances are present in beer and spirits standardised, Crustacea (shellfish), Egg products, Fish products., Dairy products, Peanuts, Soybeans, Tree nuts, Sesame seeds and any added Sulphites in concentrations of 10 mg/kg or more.

Potassium Sorbate does not contain any known allergens as listed in Standard 1.2.3
