Calcium citrate is a fine white powder used to supplement the level of calcium in food products and to provide a source of calcium for reaction with food stabilizers such as carrageenan, pectin and alginate.
It is also commonly used in nutritional products as a calcium source. Calcium citrate contains approximately 21% elemental calcium and has slight solubility in water systems.
