Guar gum is the flour derived from a seed collected from a shrub grown in India and Pakistan.

Guar gum is a natural thickener and stabiliser. It will thicken when added to cold water, but will increase in viscosity when heated to above 80°C. Guar gum is used as a thickener in a wide range of applications such as in sauces and salad dressings, and as a stabiliser in frozen products such as ice cream, where it helps reduce the formation of ice crystals.
