Our sorbet stabiliser is an optimised cold soluble blend of stabiliser to give the desired sensory and stability required in a sorbet application, resulting in a creamy smooth texture.
Application: To stabilise sorbet/water ice yielding improved mouthfeel, scoopability, stability against temperature fluctuations and meltdown resistance.
Usage: For use in water ice/sorbet at a suggested dose rate between 0.2% and 0.3%. Preferably dry blend with sugar and add in under vigorous agitation. Refrigerate before churning.
