Pectin Amidated (Low sugar) is an apple-based pectin which has been modified to allow it to work in low sugar systems. This pectin will operate in a range between 10 and 40% sugar (based on fruit sugars and added sugar). Typical dose rates for this pectin are 0.4 to 1.0%.
Products made with Pectin Amidated (Low Sugar) can also be re-heated to melt the gel, and may be suitable for glazes and nappages.
