Crystalline Fructose is the sweetest of all the nutritive sugars, about 1.4x that of sucrose, with an excellent flavour profile and no aftertaste. It also has a low glycemic index and is used extensively in sports and diabetic products.
Crystalline fructose is also highly soluble and can be used in a wide range of applications without risk of crystallising. It is also an excellent flavour enhancer when used in conjunction with sucrose, especially in berry products.
