Calcium Chloride (E509) dehydrate is a fine white powder used to supplement the level of calcium in food products and to provide a source of calcium ions for reaction with food stabilizers such as carrageenan, pectin or alginate.
Calcium Chloride dehydrate contains approximately 26 % elemental calcium. It is easily water-soluble. It is also very hygroscopic, and must be stored in an air-tight container in cool, dry conditions.
