Potassium Citrate is a free-flowing white crystalline powder. It is easily soluble in water, and insoluble in oils and alcohol. Its effect is similar to that of sodium citrate in that it can be used to increase the pH of a food product (i.e. make it less acidic) and can be used where reduced sodium is important. It also provides a good source of potassium for nutritional products such sports beverages and gels, without a strong saline or bitter flavour.
